  • 2 tbsp pure maple syrup
  • 1/4 tsp stevia or preferred low-calorie sweetener
  • 1/3 cup unsweetened plant-based milk or water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix oat flour, protein powder, chia seeds, baking powder, baking soda, cinnamon, nutmeg, and ginger.
  3. In another bowl, whisk pumpkin puree, maple syrup, low-calorie sweetener, and plant-based milk until smooth.
  4. Combine wet ingredients with dry ingredients; fold gently until just combined.
  5. Spoon batter into muffin tins about three-quarters full.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let cool for 10 minutes before removing from the tin.
