  • 1 lb boneless skinless salmon (or two 6-oz cans of wild pink salmon)
  • 1/2 cup plain breadcrumbs
  • 2 Tbsp red curry paste
  • 1 egg, lightly beaten
  • 1/2 cup plain whole-milk Greek yogurt
  • 8 butter lettuce leaves
  • Olive oil for cooking

Instructions

  1. If using fresh salmon, pulse it in a food processor until finely chopped. In a bowl, combine with breadcrumbs, red curry paste, beaten egg, paprika, and half the salt; mix well.
  2. Form mixture into eight patties and refrigerate for 30 minutes.
  3. While chilling, prepare the lemon yogurt by mixing Greek yogurt, lemon juice, chopped cilantro, grated garlic, and remaining salt.
  4. Heat olive oil in a skillet over medium-high heat and cook patties for about 3-4 minutes on each side until browned.
  5. Assemble sliders in lettuce leaves and top with lemon yogurt sauce.
