  • 1 lb short pasta (like penne or rigatoni)
  • 1 cup whole milk ricotta cheese
  • 1 cup finely grated Parmesan cheese
  • 1 tablespoon freshly grated lemon zest
  • ¼ cup fresh lemon juice (from 1 to 2 lemons)
  • Salt and black pepper, to taste
  • 2 cups arugula
  • Olive oil for drizzling

Instructions

  1. Cook pasta according to package instructions until al dente. Reserve 1 cup of starchy pasta water before draining.
  2. In the same pot, combine ricotta, Parmesan, lemon zest, lemon juice, salt, and pepper until well mixed.
  3. Whisk in half a cup of reserved pasta water until smooth.
  4. Add drained pasta back into the pot and toss until coated; add more pasta water if needed.
  5. Gently fold in arugula just before serving.
  6. Serve hot with extra olive oil, Parmesan, chili flakes, and lemon wedges.
