  • 2 cups raspberries (fresh or frozen)
  • 2 1/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon corn starch
  • 1/4 teaspoon salt
  • 1 cup unsalted butter (melted)
  • 1 1/2 cups granulated sugar (for custard)
  • 1/3 cup corn starch
  • 6 large eggs
  • 3/4 cup freshly squeezed lemon juice
  • 1/4 cup reduced raspberry puree (from 2 cups raspberries)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking dish.
  2. In a bowl, combine flour, sugar, corn starch, and salt for the crust. Stir in melted butter until blended. Press into the bottom of the prepared dish.
  3. Bake the crust for about 20 minutes until lightly golden.
  4. For the custard, whisk together sugar and corn starch in a separate bowl. Add eggs one at a time, followed by lemon juice and raspberry puree.
  5. Pour the custard over the baked crust and return it to the oven for another 25-30 minutes until set but slightly jiggly in the center.
  6. Allow cooling completely at room temperature before slicing.
