  • 1 cup whole milk
  • 2 cups heavy cream
  • ¾ cup granulated sugar
  • 4 large egg yolks
  • ½ cup fresh lemon juice
  • 1½ tbsp lemon zest
  • ½ tsp vanilla extract
  • Pinch of salt
  • ½ cup lemon curd (optional)

Instructions

  1. In a saucepan, combine milk, cream, half the sugar, and lemon zest. Heat over medium until steaming but not boiling.
  2. In a bowl, whisk egg yolks, remaining sugar, and salt until pale and thick.
  3. Slowly stream the warm milk mixture into the yolks while whisking continuously. Return everything to the saucepan.
  4. Stir constantly over medium heat until thickened and coats the back of a spoon (170–175°F). Remove from heat.
  5. Strain through a fine mesh sieve into another bowl. Stir in lemon juice and vanilla extract.
  6. Cover and chill for at least four hours or overnight until completely cold.
  7. Churn in an ice cream maker until soft-serve consistency (20–25 minutes).
  8. Layer half the ice cream in an airtight container, dollop in half of the lemon curd (if using), swirl gently, then repeat with remaining ice cream and curd.
  9. Cover and freeze for at least four hours or until firm.
