  • 1 Tbsp lemon zest
  • 4 large egg yolks
  • ¾ cup granulated sugar (for curd)
  • ½ cup unsalted butter (cold and cubed)
  • 2½ cups all-purpose flour
  • ½ tsp baking powder
  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar (for cookies)
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • Powdered sugar for dusting

Instructions

  1. For the lemon curd: In a saucepan, whisk together lemon juice, zest, egg yolks, sugar, and salt over medium-low heat until it thickens (20–25 minutes). Once thickened, remove from heat and whisk in cold butter until smooth. Cover with plastic wrap directly on the surface and cool.
  2. For the cookie dough: Whisk flour, baking powder, and salt in one bowl. In another bowl, cream softened butter with sugar until fluffy. Add an egg yolk, vanilla extract, and lemon zest before gradually folding in dry ingredients until just combined. Chill the dough for at least one hour.
  3. Preheat oven to 350°F (175°C). Scoop dough into balls on lined baking sheets; press wells into each ball. Bake for about 10 minutes until edges are lightly golden.
  4. While warm, fill each cookie with lemon curd and dust with powdered sugar once cooled.
