Korean Beef Bowls with Chili Aioli are a vibrant and flavorful dish that combines tender marinated sirloin steak with fresh vegetables, all topped off with a zesty chili aioli.   • 1 lb top sirloin steak (sliced into thin strips)
  • 3 1/2 tbsp lower sodium soy sauce
  • 2 tbsp brown sugar
  • 2 tsp chili sauce (Sriracha or Gochujang)
  • 4 cloves of garlic (minced)
  • 1 tsp grated ginger
  • 1 tsp sesame oil
  • 1 cup rice (uncooked)
  • 1 red bell pepper (thinly sliced)
  • 2 medium-large carrots (grated or julienned)
  • 1/2 cucumber (thinly sliced and halved)
  • 1/4 cup thinly sliced green onion
  • Optional garnish: 2 tbsp sesame seeds, fresh basil, chili peppers
  • 2 tbsp olive or canola-based mayonnaise

Instructions

  1. In a gallon-sized Ziploc bag, combine soy sauce, brown sugar, chili sauce, garlic, and ginger. Add sliced steak to the bag, zip it closed, and give it a good rub so every piece is coated. Let it sit in the refrigerator for 1-2 hours.
  2. While your beef is soaking up all that goodness, prepare your rice according to package instructions.
  3. In a small bowl, mix together mayonnaise, chili sauce, and sesame oil. Stir until combined.
  4. Heat a large skillet over medium-high heat and add 1 teaspoon of sesame oil. Toss in your sliced red bell pepper and sauté for about 2-3 minutes until softened. Remove the peppers and increase the heat to high. Add marinated steak to the hot skillet. Cook for around 3 minutes, tossing frequently.
  5. To assemble your bowls, spoon one-fourth of your cooked rice into each bowl. Pile on the delicious steak and red pepper mixture on one side. Add carrot ribbons and cucumber slices next. Finish off with a generous dollop of chili aioli and top with green onions and sesame seeds if desired.
