  • 1 lb boneless, skinless chicken thighs
  • 1/4 cup soy sauce
  • 2 tablespoons gochujang (Korean red pepper paste)
  • 1 tablespoon sesame oil
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame seeds
  • 1/4 teaspoon black pepper
  • 2 cups cooked rice (white or brown)
  • 1 cup kimchi
  • 1 cucumber, thinly sliced
  • 1 carrot, julienned
  • 2 green onions, chopped
  • 1 tablespoon toasted sesame seeds for garnish

Instructions

  1. In a bowl, mix soy sauce, gochujang, sesame oil, honey, garlic, ginger, rice vinegar, sesame seeds, and black pepper.
  2. Marinate the chicken thighs in the mixture for at least 1 hour (overnight is best).
  3. Grill the chicken on medium-high heat for about 6-7 minutes per side until cooked through.
  4. Let the chicken rest for 5 minutes before slicing.
  5. Assemble bowls with rice as the base topped with chicken slices, kimchi, cucumber, and carrots.
  6. Garnish with green onions and sesame seeds before serving.
