- 4 bell peppers
- 1 lb ground turkey
- 1 cup cauliflower rice
- 15 oz marinara sauce
- 1 cup mozzarella cheese
- 1 small sweet onion
- 1 large carrot
- 2 garlic cloves
- 2 Tbsp olive oil (divided)
- 1 tbsp smoked paprika
- 1 cup pitted black olives (roughly chopped)
- kosher salt and pepper (to taste)
- 1 tbsp minced cilantro (for garnish)
- Preheat your oven to 350°F and line a sheet pan with parchment paper.
- Slice each bell pepper in half lengthwise, remove seeds, season with salt and pepper, and drizzle with olive oil.
- Roast the peppers cut side up for 10-12 minutes until soft.
- In a food processor, finely chop the onion, carrot, and garlic.
- Sauté the veggie mix in olive oil until tender (3-4 minutes).
- Add ground turkey and smoked paprika; cook until turkey is no longer pink (5-6 minutes).
- Stir in cauliflower rice and chopped olives; cook for another 5 minutes.
- Fill each roasted pepper half with the turkey mixture and top with mozzarella cheese.
- Bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.
- Garnish with minced cilantro before serving hot.
