  • 2 Bell Peppers (Chopped)
  • 1/2 Onion (Chopped)
  • 2 tsp Minced Garlic
  • 3 cups Beef Broth
  • 2 Roma Tomatoes (Chopped)
  • 1 cup Canned Diced Tomatoes (Drained)
  • 1 tbsp Tomato Paste
  • 2 cups Cauliflower Rice

Instructions

  1. In a skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess grease.
  2. Add bell peppers, onion, garlic, Worcestershire sauce, Roma tomatoes, canned diced tomatoes, salt, and pepper to the slow cooker.
  3. In a bowl, mix beef broth and tomato paste until combined.
  4. Stir in the browned beef and pour the broth mixture over the ingredients in the slow cooker.
  5. Cover and cook on high for 4 hours.
  6. Remove lid and stir in cauliflower rice; cook for an additional 30 minutes before serving.
