  • 1/4 cup Pumpkin Puree
  • 2 large Eggs
  • 1 tsp Pumpkin Pie Spice
  • 1 tsp Ground Cinnamon
  • 1 tsp Vanilla Extract
  • 1/4 cup Butter (softened)
  • 3 ounces Cream Cheese (softened)
  • 1/3 cup Swerve Brown Sugar Substitute
  • 1/3 cup Chopped Pecans
  • 1 tbsp Melted Butter
  • 2 tbsp Swerve Brown Sugar Substitute
  • 1/2 tsp Pumpkin Pie Spice

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit and line a muffin tin with cupcake liners.
  2. In a mixing bowl, combine almond flour, pumpkin puree, eggs, pumpkin pie spice, ground cinnamon, vanilla extract, softened butter, cream cheese, and Swerve brown sugar substitute. Blend until smooth.
  3. Gently fold in chopped pecans.
  4. Fill the lined muffin tins about two-thirds full with the batter.
  5. In another bowl, mix melted butter, Swerve brown sugar substitute, and pumpkin pie spice for the topping; sprinkle over the muffins.
  6. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
