  • 1/2 Onion (chopped)
  • 1 Green Bell Pepper (chopped)
  • 1 tbsp Tomato Paste
  • 1 tbsp Chili Powder
  • 2 tsp Cumin
  • 1 1/2 cups Beef Broth
  • 1 1/2 cups Almond Flour
  • 3 large Eggs

Instructions

  1. Preheat oven to 350°F.
  2. In a large oven-proof skillet, sauté ground beef, onion, jalapeno, and bell pepper over medium-high heat until the beef is browned and veggies are softened. Drain excess grease.
  3. Add tomato paste, chili powder, cumin, oregano, and seasoning; stir for about 30 seconds.
  4. Pour in diced tomatoes, canned green chilis, and beef broth; let simmer for about five minutes.
  5. In another bowl, mix almond flour, baking powder, melted butter, sugar substitute, and eggs until combined.
  6. Spoon the cornbread batter over the chili evenly and bake for about 15-20 minutes until golden brown.
