  • 6 large eggs
  • 4 strips thick-cut turkey bacon, cooked and crumbled
  • 3 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon sugar
  • Pinch of salt
  • Pinch of black pepper
  • Smoked paprika for garnish
  • Fresh chives, chopped (optional)

Instructions

  1. Boil the eggs by placing them in a single layer in a saucepan covered with cold water. Bring to a boil over medium heat, then cover and remove from heat. Let stand for 10-12 minutes.
  2. Transfer eggs to an ice bath for five minutes to cool. Peel under running water if needed.
  3. Halve the eggs lengthwise and scoop out the yolks into a bowl. Mash until smooth.
  4. Mix in mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, and black pepper until well combined.
  5. Stir in most of the crumbled turkey bacon (reserve some for garnish) before spooning or piping the filling back into the egg whites.
  6. Garnish with reserved bacon, sprinkle smoked paprika on top, and add chives if desired. Chill for at least 30 minutes before serving.
