  • 2 tablespoons butter (melted)
  • 2 medium apples (peeled and diced)
  • 1/2 cup dried cranberries
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3 tablespoons coconut sugar
  • 1/4 cup chopped pecans

Instructions

  1. Preheat oven to 400°F (200°C). Prick sweet potatoes with a fork and place on a baking sheet. Bake for 45-50 minutes until tender.
  2. While baking, melt butter in a skillet over medium heat. Sauté diced apples for 5-7 minutes until softened.
  3. In a bowl, combine sautéed apples, dried cranberries, cinnamon, nutmeg, coconut sugar, and chopped pecans.
  4. Once sweet potatoes are cool enough to handle, slice them in half lengthwise and scoop out some flesh into the apple mixture. Mix well and fill each potato skin.
  5. Return filled sweet potatoes to the oven at 350°F (175°C) for an additional 10-15 minutes.
