  • 1/3 cup brown sugar

  • 1 tbsp vanilla extract
  • 1 egg (room temperature)
  • 1 & 1/4 cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/4 tsp cinnamon
  • Pinch of nutmeg
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup powdered sugar
  • 1.5 tbsp milk
  • 1/4 tsp vanilla

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla extract; mix well.
  3. Gradually incorporate flour, oats, cinnamon, nutmeg, baking soda, and salt until just combined.
  4. Scoop out cookie dough in equal balls onto a prepared baking sheet and gently press down to about one inch thick.
  5. Bake for about 10 minutes until edges are golden but centers remain soft. Let cool on the baking sheet for 20 minutes before transferring to a cooling rack.
  6. For icing, whisk together powdered sugar, milk, and vanilla until smooth. Drizzle over cooled cookies.
