  • 8 small corn tortillas, cut into quarters
  • 1 cup black beans (drained and rinsed)
  • 1 cup diced chicken
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 jalapeño, finely chopped (optional)
  • 6 large eggs
  • 1 cup milk
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • Salsa and shredded cheddar/Monterey Jack cheese for topping

Instructions

  1. Preheat the oven to 375°F (190°C). In a skillet over medium heat, sauté onion, bell pepper, and jalapeño until softened (about 5 minutes). Set aside.
  2. Grease a 9×13-inch baking dish. Layer tortilla quarters on the bottom, then add half of the black beans, chicken, and sautéed vegetables. Repeat layering with remaining ingredients.
  3. In a bowl, whisk together eggs, milk, cumin, smoked paprika, salt, and pepper. Pour over the layered casserole.
  4. Top with salsa and sprinkle with cheese. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown.
  5. Let cool for 5 minutes before garnishing with cilantro or avocado slices.
