Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 2 TBSP granulated sugar
  • 2/3 cup chilled unsalted butter
  • 6 to 8 large apples (preferably Granny Smith and Honeycrisp)
  • 1/3 cup granulated sugar (for filling)
  • 1/4 cup packed brown sugar
  • 4 tablespoons cold unsalted butter, cut into 1/4-inch dice
  • 1 TBSP plus 1 tsp cornstarch
  • 2 tsp vanilla extract (alcohol-free)
  • 1 tsp dry pectin or an extra 1/2 tsp cornstarch
  • 1/2 tsp ground cinnamon
  • 1/4 tsp freshly grated nutmeg
  • 1/4 tsp kosher salt
  • 1 cup brown sugar (for sauce)
  • 1/2 cup light corn syrup
  • 3 tbsp unsalted butter
  • 1 1/2 tsp kosher salt
  • 1/2 cup heavy cream

Instructions

  1. Prepare the crust by mixing flour, salt, and sugar in a food processor. Add chilled butter and pulse until crumbly. Gradually add ice water until the dough forms.
  2. Roll out the dough and fit it into your pie dish, pricking the bottom to prevent bubbling.
  3. For the crumb topping, blend sugars, cinnamon, and flour; mix in cold butter until crumbly.
  4. Sauté sliced apples with sugar until half-cooked for enhanced sweetness. Combine cooled apples with additional sugars and spices.
  5. Assemble by layering apples into the crust and topping with the crumb mixture. Bake in a preheated oven until golden brown.
  6. Create the Hot Buttered vanilla extract sauce by boiling brown sugar and corn syrup; stir in cream before serving warm over each slice.
