  • 1 Tbsp pumpkin seeds (pepitas)
  • 1 Tbsp pine nuts
  • 1 Tbsp honey
  • 1 Tbsp lemon juice
  • 1/4 cup olive oil
  • 1 tsp Dijon mustard

Instructions

  1. Preheat oven to 425°F. Toss diced sweet potatoes with olive oil, salt, and thyme. Spread on a lined sheet pan and roast for about 30 minutes until golden and tender.
  2. While roasting, mix honey, lemon juice, olive oil, Dijon mustard, and thyme in a jar; shake well to combine.
  3. In a bowl, combine arugula, blueberries, pumpkin seeds, pine nuts, and roasted sweet potatoes. Drizzle with dressing before serving warm.
