  • 4 pieces bone-in, skin-on chicken thighs (about 2 lbs)
  • 1 cup BBQ sauce
  • 1/4 cup honey
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika

  • to taste pepper
  • 2 lbs small Yukon Gold potatoes
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 2 tablespoons unsalted butter

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together BBQ sauce, honey, olive oil, garlic powder, smoked paprika, salt, and pepper.
  3. Coat chicken thighs in the marinade and place them in a baking dish.
  4. Bake for 35-40 minutes until cooked through (internal temperature of 165°F or 75°C).
  5. While the chicken bakes, boil halved or quartered Yukon Gold potatoes in salted water until tender (about 15-20 minutes).
  6. Drain potatoes and return to the pot; mash with heavy cream, Parmesan cheese, minced garlic, butter, salt, and pepper until creamy.
  7. Let the chicken rest for a few minutes before serving it alongside the creamy potatoes.
