  • 1/2 cup packed brown sugar
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract (pure)
  • 8 oz cream cheese (softened)
  • 1/2 cup unsalted butter (softened)
  • 34 cups powdered sugar (sifted)
  • 1 1/2 tsp vanilla extract (pure)
  • 1/8 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a medium bowl, combine softened cream cheese and granulated sugar until smooth. Mix in egg yolk and vanilla; set aside.
  3. In a large bowl, whisk together flour, baking soda, salt, and spices.
  4. In another bowl, mix sugars, pumpkin puree, vegetable oil, eggs, and vanilla until well combined.
  5. Gently fold dry ingredients into wet mixture until just combined.
  6. Fill muffin liners halfway with batter, add cream cheese filling on top, then cover with more batter.
  7. Bake for 18–22 minutes or until a toothpick comes out clean from the muffin part.
