  • ½ cup unsalted butter, melted
  • 3 (8-ounce) blocks full-fat cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 cup fresh or frozen raspberries
  • ¼ cup sour cream or Greek yogurt

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch pan with parchment paper.
  2. Mix graham cracker crumbs, sugar, and salt in a bowl; add melted butter and combine. Press into the bottom of the pan and bake for 8-10 minutes until lightly golden.
  3. In a saucepan over medium heat, combine raspberries, sugar, and lemon juice; simmer for about 5-7 minutes until thickened. Cool completely.
  4. Beat cream cheese until smooth; gradually mix in sugar. Add eggs one at a time; stir in vanilla and sour cream/Greek yogurt. Fold in flour gently.
  5. Pour cheesecake mixture over crust; dollop raspberry purée on top and gently swirl with a knife.
  6. Bake for 35-45 minutes until edges are set but center wobbles slightly. Cool inside the oven with door ajar for an hour, then refrigerate for at least 4 hours before slicing.
