  • 2 1/2 cups whole wheat pastry flour
  • 10 tbsp cold butter
  • ice cold water (around 9 tablespoons)
  • 2 tsp coconut sugar
  • 3/4 tsp salt
  • 2 cups any kind of berry
  • 2 tbsp water
  • 4 tsp honey
  • 1/4 cup powdered sugar
  • 1 1/2 tbsp almond milk
  • 1 1/2 tbsp peanut butter
  • 1 egg (for egg wash)
  • chopped peanuts

Instructions

  1. Make the dough by combining whole wheat pastry flour, coconut sugar, and salt in a bowl. Cut in cold butter until pea-sized chunks form.
  2. Gradually add ice-cold water until the dough comes together. Chill for 30 minutes.
  3. Prepare the berry jam by simmering berries with honey and water until thickened; smash to desired consistency.
  4. Roll out chilled dough into rectangles; fill half with cooled jam, seal edges with egg wash.
  5. Bake at 400°F for about 20 minutes until golden brown.
  6. Drizzle with a glaze made from powdered sugar, almond milk, and peanut butter before serving.
