  • 1 teaspoon granulated sugar
  • 0.5 teaspoon active dry yeast
  • 0.75 teaspoon kosher salt
  • 7 ounces warm water (105°F to 115°F)
  • 1 tablespoon extra virgin olive oil
  • 1 cup pureed or crushed canned San Marzano tomatoes
  • 23 fresh garlic cloves (minced)
  • 7 ounces fresh mozzarella cheese (cubed)
  • Fresh basil leaves (torn)

Instructions

  1. In a medium bowl, whisk together flour, sugar, yeast, and salt. Add warm water and olive oil; stir until the dough forms.
  2. Knead the dough on a floured surface for about 3 minutes until smooth and slightly sticky. Place in a greased bowl, cover, and let rise for about 2 hours until doubled in size.
  3. Preheat your oven to 550°F (285°C) along with the pizza stone or steel for at least an hour.
  4. Combine pureed tomatoes, minced garlic, olive oil, pepper, and salt in a small bowl to make the sauce.
  5. Divide the risen dough into two portions and let rest for 5-10 minutes.
  6. Dust the pizza peel with semolina and stretch one portion of dough into a roughly 10-inch circle.
  7. Drizzle olive oil over the dough; add half a cup of tomato sauce, leaving a border around the edges. Sprinkle with cheese and torn basil leaves.
  8. Slide the pizza onto the preheated stone/steel and bake for 7-8 minutes until golden brown and bubbly.
  9. Remove from oven, add extra olive oil and more basil if desired; slice and serve hot.
