  • 2 tablespoons olive oil (or avocado oil)
  • 4 cloves garlic (minced)
  • 3 tablespoons flour (or 1 tbsp cornstarch)
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • ½ cup grated parmesan cheese
  • 1 cup vegetable stock
  • 4 ounces light cream cheese
  • 1 cup milk of choice (2%, almond or cashew milk)

Instructions

  1. Sauté minced garlic in olive oil over medium heat for about 1 minute until fragrant.
  2. Add flour (or cornstarch) and mix well. Stir in light cream cheese until melted.
  3. Gradually whisk in your choice of milk and vegetable stock along with salt, black pepper, and Italian seasoning. Let simmer for 2-3 minutes until thickened.
  4. Stir in grated parmesan cheese until fully melted and incorporated.
  5. Serve immediately over pasta or store in an airtight container in the fridge for up to five days.
