  • 2 cups quick oats
  • 1/2 cup creamy peanut butter
  • 1/3 cup honey
  • 1 tsp vanilla extract
  • 1/2 cup semi-sweet chocolate chips
  • Extra creamy peanut butter for drizzling
  • Mini chocolate chips for topping

Instructions

  1. Line an 8×8” baking pan with parchment paper.
  2. In a medium bowl, mix the oats, peanut butter, honey, and vanilla until combined.
  3. Press 1 ½ cups of the mixture into the bottom of the pan.
  4. Melt remaining peanut butter and chocolate chips in a microwave-safe bowl until smooth.
  5. Pour the melted mixture over the pressed oat base.
  6. Crumble any leftover oat mixture on top and drizzle with extra peanut butter; add mini chocolate chips.
  7. Refrigerate for at least 2-3 hours until set, then cut into bars.
