  • 4 thin boneless skinless chicken breasts

  • 1 and ½ cups skim milk
  • ½ cup grated parmesan cheese
  • 2 tablespoons chopped parsley

  2. Set chicken aside and wipe out the pan. Melt remaining butter and add flour to create a roux.
  3. Gradually stir in skim milk, cooking until thickened (about 3-4 minutes).
  4. Add zoodles to the sauce, tossing gently until just tender (3-4 minutes).
  5. Slice chicken and arrange on top of zoodles; garnish with parsley before serving.
