- 1 tablespoon neutral oil
- 10 vegan gyoza (frozen)
- 2 baby bok choy (cut in half) or 1 large bok choy (quartered)
- 6 cremini mushrooms (sliced)
- 2.75 cups vegetable stock
- 2 packages fresh udon noodles (7 oz each)
- 3 tablespoons cashew butter or tahini
- 2 tablespoons soy sauce
- 2 teaspoons rice vinegar or white grape juice vinegar
- 1 tablespoon chili crisp
- In a pot over medium heat, add neutral oil. Sauté frozen vegan gyoza for about 2 minutes until golden brown on one side.
- Carefully add water and cover the pot to steam the gyoza for 3-4 minutes until heated through.
- Stir in bok choy and sliced mushrooms, then pour in vegetable stock and simmer gently.
- Cook fresh udon noodles according to package instructions in a separate pot.
- Once the soup is ready, stir in cashew butter, soy sauce, rice vinegar, sesame oil, and chili crisp until smooth. Serve over udon noodles.
