Ingredients

  • 1 tablespoon neutral oil
  • 10 vegan gyoza (frozen)
  • 2 baby bok choy (cut in half) or 1 large bok choy (quartered)
  • 6 cremini mushrooms (sliced)
  • 2.75 cups vegetable stock
  • 2 packages fresh udon noodles (7 oz each)
  • 3 tablespoons cashew butter or tahini
  • 2 tablespoons soy sauce
  • 2 teaspoons rice vinegar or white grape juice vinegar
  • 1 tablespoon chili crisp

Instructions

  1. In a pot over medium heat, add neutral oil. Sauté frozen vegan gyoza for about 2 minutes until golden brown on one side.
  2. Carefully add water and cover the pot to steam the gyoza for 3-4 minutes until heated through.
  3. Stir in bok choy and sliced mushrooms, then pour in vegetable stock and simmer gently.
  4. Cook fresh udon noodles according to package instructions in a separate pot.
  5. Once the soup is ready, stir in cashew butter, soy sauce, rice vinegar, sesame oil, and chili crisp until smooth. Serve over udon noodles.
