  • 500 g guavas (chopped and peeled)
  • 80 g granulated white sugar
  • 1 tbsp lime juice
  • 300 g Tennis biscuits
  • 150 g unsalted butter (melted)
  • 700 g cream cheese
  • 250 g castor sugar
  • 4 extra large eggs
  • 1 tsp vanilla extract
  • 200 ml whipping cream
  • 200 g guavas (for decorating)

Instructions

  1. Preheat your oven to 160°C (320°F).
  2. For the base, crush the Tennis biscuits and mix with melted butter until well combined. Press into the bottom of a springform pan.
  3. To make the filling, beat cream cheese and castor sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and whipping cream until fully incorporated.
  4. Pour the cheesecake mixture over the crust in the pan and bake in a water bath for 50-60 minutes or until set with a slight jiggle in the center.
  5. Allow to cool at room temperature before chilling in the refrigerator for at least 4 hours or overnight.
  6. Prepare guava compote by cooking chopped guavas with sugar and lime juice until thickened; cool before serving on top of cheesecake.
