  • 1 1/2 lbs skirt steak
  • 1 cup dry Israeli couscous
  • 1/2 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1 tbsp honey
  • 4 garlic cloves, minced
  • 1 1/2 tsp dijon mustard
  • 1 tsp dried oregano
  • 1 3/4 tsp kosher salt
  • Freshly ground black pepper
  • 1 mini cucumber, chopped
  • 4 scallions, chopped
  • 1/4 cup fresh dill, finely chopped
  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup crumbled feta (or non-dairy alternative)

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, honey, garlic, Dijon mustard, oregano, salt, and pepper to create the marinade.
  2. Pour half of the marinade over the skirt steak in a dish and let it marinate for at least 30 minutes.
  3. Meanwhile, cook the Israeli couscous according to package instructions. Rinse under cold water after cooking.
  4. Combine cooked couscous with cucumber, scallions, dill, parsley, feta (if using), and the remaining marinade in a large bowl.
  5. Preheat your grill to medium-high heat. Grill the marinated skirt steak for 3-4 minutes on each side until desired doneness is reached.
