  • 4 large whole wheat tortillas
  • 1 zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 red onion, sliced
  • 8 ounces fresh spinach
  • 1 cup cherry tomatoes, halved
  • 1 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium heat.
  2. In a bowl, toss zucchini, bell pepper, and onion with olive oil, salt, pepper, oregano, and basil.
  3. Grill vegetables for about 5-7 minutes until tender and marked.
  4. In a skillet over medium heat, sauté minced garlic in olive oil until fragrant. Add spinach and cook until wilted.
  5. On each tortilla half, layer grilled veggies, sautéed spinach, cherry tomatoes, feta cheese, and mozzarella cheese. Fold to close.
  6. Grill quesadillas for about 3-4 minutes on each side until golden brown and cheese melts.
  7. Slice into wedges and serve warm.
