  • 2 Boneless, Skinless Chicken Breasts
  • 2 tablespoons Olive oil
  • 1 tablespoon Fresh lime juice
  • ½ teaspoon Paprika
  • ½ teaspoon Ground Cumin
  • ¼ teaspoon Chili Powder
  • ¼ teaspoon Garlic Powder
  • ¼ teaspoon Onion Powder
  • ¼ teaspoon Dried Oregano
  • A pinch of sea salt and freshly ground black pepper (to taste)
  • 1 Cup Cooked Brown Rice
  • 1 tablespoon Lime Juice
  • 2 Cups Mixed Greens
  • ½ Cup Black Beans
  • ½ Cup Canned corn (drained or grilled)
  • ⅓ Cup Cherry Tomatoes (cut into quarters)
  • 1 Small Avocado (sliced)
  • 2 tablespoons Greek yogurt
  • ½ Red onion (diced)
  • 1 Jalapeno Pepper (sliced)
  • A small handful of chopped cilantro (plus more to garnish)

Instructions

  1. Marinate the chicken by combining olive oil, lime juice, paprika, cumin, chili powder, garlic powder, onion powder, oregano, salt, and pepper in a large ziplock bag. Add the chicken breasts and shake to coat. Let marinate for at least 30 minutes.
  2. Grill the marinated chicken over medium-high heat for 5-7 minutes on each side until cooked through. Let rest for 5 minutes before slicing.
  3. Mix cooked brown rice with lime juice, chopped cilantro, salt, and pepper in a bowl.
  4. Assemble each burrito bowl starting with mixed greens at the bottom. Add sliced chicken and top with black beans, corn, cherry tomatoes, avocado slices, Greek yogurt, red onion, and jalapeños.
