  • 1 cup red onion, thinly sliced

  • ½ cup crumbled feta cheese (optional)
  • ½ cup extra-virgin olive oil
  • ½ cup apple cider vinegar
  • 2 cloves garlic, pressed or minced
  • 2 teaspoons dry mustard
  • 2 teaspoons dried thyme
  • 2 teaspoons dried oregano
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper

Instructions

  1. Cook the potatoes in salted boiling water until tender (about 15 minutes). Drain and let cool slightly before cutting into bite-sized chunks.
