- 1/4 cup extra virgin olive oil
- 3 tablespoons apple cider vinegar
- 1–2 garlic cloves (minced)
- 1 teaspoon dried oregano
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground pepper
- 1 large cucumber (halved lengthways, seeded and sliced)
- 12 ounces cherry tomatoes (halved)
- 1 yellow or orange bell pepper (deseeded and diced)
- ½ red onion (thinly sliced)
- 14 ounces chickpeas (one can, rinsed and drained)
- 10 ounces pitted Kalamata olives
- A bunch of parsley (finely chopped)
- 3.5 ounces feta cheese (crumbled)
- Prepare the dressing by combining olive oil, apple cider vinegar, minced garlic, dried oregano, salt, and pepper in a jar. Shake well to mix.
- Chop the cucumber, halve the cherry tomatoes, dice the bell pepper, and slice the red onion.
- In a large bowl, combine the veggies with rinsed chickpeas and crumbled feta (if using). Pour over the dressing and toss gently.
- Serve immediately or let chill for 30 minutes to enhance flavors.
