  • 4 tablespoons butter (divided; use plant-based if desired)
  • 1.52 pounds bone-in, skin-on chicken thighs
  • 1 sweet yellow onion (diced)
  • 2 carrots (peeled and chopped)
  • 2 celery stalks (sliced)
  • 1 teaspoon ground turmeric
  • 2 teaspoons lemon juice
  • 6 cups chicken bone broth
  • Optional: 8 oz orzo pasta

Instructions

  1. Sear the chicken thighs in a large Dutch oven over medium-high heat with 2 tablespoons of butter until browned on both sides. Set aside.
  2. In the same pot, add remaining butter and sauté onions, carrots, and celery for 2-4 minutes until tender.
  3. Stir in turmeric, lemon juice, and Better than Bouillon Chicken; then pour in the chicken broth.
  4. Bring to a simmer and add the seared chicken thighs back into the pot. Simmer for about 15 minutes until internal temperature reaches 165°F.
  5. Remove the chicken, shred the meat, and return it to the pot along with optional cooked orzo pasta.
  6. Taste and adjust seasoning if needed before serving hot.
