Ingredients

Scale
  • 1 Large Head Cauliflower (broken into florets)

  • 2 Cups Chicken or Vegetable Broth
  • 4 Cups Water
  • 2 Tablespoons Butter or Olive Oil
  • Salt and Pepper (to taste)
  • Fresh Chopped Herbs (for garnish)

Instructions

  1. Cook the cauliflower: In a large pot, combine cauliflower, broth, water, half of the garlic, salt, and pepper. Bring to a boil; then reduce heat and simmer until fork-tender (about 15-18 minutes).
  2. Strain and blend: Strain the cauliflower to remove excess liquid. Transfer to a food processor with remaining garlic and butter or olive oil. Blend until smooth.
  3. Season and serve: Taste your mash and adjust seasoning as needed. Serve in a bowl, garnished with fresh herbs.
