  • 12 large eggs
  • 1/2 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon chopped fresh cilantro
  • 1 teaspoon lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • crumbled cotija cheese
  • diced red onion
  • diced jalapeño (optional)
  • chipotle mayo
  • paprika

Instructions

  1. Boil the eggs in cold water until cooked (10-12 minutes). Cool in cold water, then peel.
  2. Slice each egg in half and scoop out yolks into a bowl.
  3. Mash yolks and mix with mayonnaise, sour cream, cilantro, lime juice, chili powder, garlic powder, salt, and pepper until smooth.
  4. Spoon or pipe the mixture back into egg whites.
  5. Top with cotija cheese, red onion, jalapeño (if using), and drizzle with chipotle mayo.
  6. Garnish with paprika before serving.
