  • 8 oz fettuccine pasta (or any pasta of choice)
  • 1 lb large raw shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 4 oz light cream cheese
  • 1 1/2 cups milk of choice
  • 1 tbsp cornstarch or gluten-free flour
  • 24 garlic cloves, minced
  • 1 cup freshly grated parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Bring a pot of salted water to boil and cook the fettuccine according to package directions until al-dente. Drain and set aside.
  2. In a skillet over medium heat, add olive oil and sauté the shrimp seasoned with salt and pepper for about 2-3 minutes until pink. Remove from the pan.
  3. In the same skillet, add minced garlic and anchovies; sauté for about 1 minute until fragrant.
  4. Whisk together milk, softened cream cheese, and cornstarch in a bowl until smooth. Pour into the skillet and stir continuously until the sauce thickens (about 2-3 minutes).
  5. Combine cooked pasta, shrimp, parmesan cheese, and chopped parsley into the sauce, tossing gently.
  6. Serve immediately with extra parsley for garnish.
