  • 2 lbs chicken breast (cut into bite-sized pieces)
  • 1/2 cup cornstarch
  • 1/4 cup all-purpose flour
  • 2 large eggs (beaten)
  • 1/2 cup vegetable oil (for frying)
  • 1/2 cup orange juice
  • 1/4 cup soy sauce
  • 1/4 cup sugar
  • 2 tbsp rice vinegar
  • 1 tsp grated ginger
  • 1/2 tsp garlic powder
  • Zest of 1 orange

Instructions

  1. In a shallow bowl, mix cornstarch and flour. Coat each chicken piece in the mixture, dip into beaten eggs, then coat again in cornstarch mixture.
  2. Heat vegetable oil in a large skillet over medium heat. Fry coated chicken pieces until golden brown and crispy (about 5 minutes per side). Transfer to paper towel-lined plate to drain.
  3. In a saucepan, combine orange juice, soy sauce, sugar, rice vinegar, ginger, and garlic powder. Bring to a simmer over medium heat.
  4. Stir in a cornstarch-water mixture and orange zest until the sauce thickens (about 2-3 minutes).
  5. Toss fried chicken in the sauce until evenly coated and serve hot over steamed rice.
