  • 2 pounds lean ground beef (90-92% lean)
  • 1 medium onion (finely chopped)
  • 2 large eggs
  • 2 garlic cloves (minced)
  • 3 tablespoons sugar-free ketchup
  • ¾ cup panko breadcrumbs
  • â…“ cup milk
  • 1½ teaspoon kosher salt (or to taste)
  • 1½ teaspoon Italian seasoning or dried oregano
  • ¼ teaspoon fresh ground black pepper
  • ½ teaspoon smoked paprika
  • 1 tablespoon Dijon mustard
  • 1 tablespoon raw honey
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon white grape juice vinegar
  • ¼ teaspoon fresh ground black pepper
  • ¼ teaspoon salt
  • 1 tablespoon freshly chopped parsley

Instructions

  1. Preheat your oven to 375°F and line a loaf pan with parchment paper.
  2. In a large bowl, combine ground beef, onion, eggs, garlic, ketchup, parsley, breadcrumbs, milk, salt, Italian seasoning, black pepper, and smoked paprika by hand until mixed.
  3. Transfer the mixture into the prepared loaf pan and press down gently to shape it.
  4. Bake in the preheated oven for 40–50 minutes.
  5. Prepare the glaze by mixing ketchup, Dijon mustard, honey, garlic powder, onion powder, vinegar, black pepper, and salt in a small bowl. Pour over the meatloaf after the initial baking time.
  6. Return to the oven for an additional 15–20 minutes until caramelized.
  7. Let rest for 10 minutes before slicing. Garnish with fresh parsley.
