  • 1 tablespoon sesame oil
  • 2 cloves garlic (minced)
  • 2 cups cooked rice (white, brown, or cauliflower)
  • 1 cup shredded carrots
  • 1 cup sliced cucumbers
  • 1 cup steamed edamame or spinach
  • Optional: soft-boiled eggs, kimchi, chopped green onions, sesame seeds

Instructions

  1. In a bowl, combine gochujang, soy sauce, honey, rice vinegar, sesame oil, and minced garlic to create the marinade.
  2. Marinate chicken in a resealable bag or bowl for at least 30 minutes.
  3. Heat a skillet over medium-high heat and cook marinated chicken until golden brown and cooked through (6-8 minutes per side).
  4. Serve over a bed of rice topped with shredded carrots, sliced cucumbers, edamame or spinach.
  5. Garnish with optional toppings such as eggs, green onions, and sesame seeds.
