  • 1 bag Success Boil-in-Bag Jasmine Rice (or 1 heaping cup of cooked rice)
  • 2 tablespoons butter
  • 1 onion, diced
  • 1 tablespoon minced garlic
  • 2 teaspoons Italian seasoning
  • 1 (28 ounce) can whole peeled tomatoes
  • 4 cups (32 oz) chicken stock
  • ¾ cup half & half (or heavy cream)
  • ¼ cup fresh basil, chopped
  • Salt and black pepper to taste

Instructions

  1. In a large pot over medium heat, melt the butter. Add diced onion, minced garlic, and Italian seasoning; sauté until onions are translucent (about 5 minutes). Season with salt and pepper.
  2. Pour in whole peeled tomatoes and chicken stock; stir well and bring to a boil. Cover the pot, reduce heat to low, and let it simmer for 30 minutes.
  3. Remove from heat and blend the soup until smooth using an immersion blender or by transferring in batches to a regular blender.
  4. Stir in half & half, fresh basil, and cooked rice until everything is well combined.
  5. Serve warm, garnished with extra basil, freshly grated parmesan cheese, and a dollop of ricotta cheese.
