  • 2 Tablespoons Olive Oil
  • 3/4 Cup Red Bell Pepper
  • 3/4 Cup Green Bell Pepper
  • 1 Cup Yellow Onion, diced
  • 2 cloves Garlic, minced
  • 2 Cups Baby Spinach
  • 12 ounces Chicken Sausage
  • 12 Eggs
  • 16 ounces Cottage Cheese
  • ½ Cup Milk
  • ⅓ Cup All Purpose Flour
  • ½ teaspoon Kosher Salt
  • ¼ teaspoon Black Pepper
  • 1 ½ Cups Shredded Cheddar Cheese, divided

Instructions

  1. Preheat your oven to 350°F (175°C) and spray your baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, sauté olive oil, red bell pepper, green bell pepper, and onion for 5–7 minutes until softened.
  3. Add garlic and spinach; stir for 2–3 minutes until the spinach wilts.
  4. Transfer veggies to a bowl to cool.
  5. In the same skillet, cook chicken sausage until browned.
  6. Combine cooled veggies with sausage in a bowl.
  7. In a large mixing bowl, whisk together eggs, cottage cheese, milk, flour, salt, and pepper until smooth.
  8. Fold in the veggie-sausage mixture and half of the shredded cheese; pour into the baking dish and top with remaining cheese.
  9. Cover with foil and bake for 30 minutes; remove foil and bake an additional 20–25 minutes until golden.
