  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 medium zucchini (sliced)
  • 1 cup broccoli florets
  • 1 medium carrot (julienned)
  • 1 cup snap peas
  • 2 cloves garlic (minced)
  • 1 tbsp fresh ginger (minced)
  • 1/3 cup low-sodium soy sauce
  • 1 tbsp sesame oil
  • Optional: honey, rice vinegar, cornstarch

Instructions

  1. Prepare all ingredients by washing and slicing the vegetables and chicken.
  2. In a large skillet over medium-high heat, heat the vegetable oil. Add chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Add garlic and ginger; stir briefly before adding bell peppers, zucchini, broccoli, carrot, and snap peas. Stir-fry for about 5 minutes until vegetables are tender-crisp.
