  • 6 medium Yukon Gold or Russet potatoes, peeled and thinly sliced
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3 garlic cloves, minced
  • 2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • Salt and black pepper, to taste
  • 1 teaspoon dried thyme (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish with butter.
  2. In a saucepan, warm heavy cream, milk, and minced garlic over medium heat until just warm.
  3. Layer half of the sliced potatoes in the prepared dish; season with salt, pepper, and half of the thyme.
  4. Pour half of the warm cream mixture over potatoes; sprinkle with one cup of cheddar cheese.
  5. Repeat layering with remaining potatoes, seasoning as before, then pour remaining cream mixture on top.
  6. Top with remaining cheddar and all of the Parmesan cheese.
  7. Cover with foil and bake for 45 minutes; uncover and bake for an additional 20-25 minutes until golden brown.
  8. Let rest for 10 minutes before serving.
