  • 1 large egg
  • 1 cup plain Greek yogurt
  • 0.5 cup unsweetened applesauce
  • 0.25 cup brown sugar
  • 1 tsp vanilla extract
  • 1 medium apple, peeled, cored, and grated
  • 0.5 cup raisins

Instructions

  1. Preheat your oven to 350°F (176°C).
  2. In a large bowl, mix together whole wheat pastry flour, rolled oats, baking powder, baking soda, ground cinnamon, and salt.
  3. In another bowl, whisk together the egg, Greek yogurt, applesauce, brown sugar, vanilla extract, and grated apple until smooth.
  4. Combine the wet ingredients with the dry mixture gently until just mixed; fold in raisins.
