  • ¾ cup finely chopped onion
  • 2 cloves garlic (finely chopped)
  • 1 pinch crushed chili flakes
  • 1 package (10-ounce) frozen chopped spinach (thawed and squeezed of extra water)
  • 1 can (14-ounce) artichoke hearts (drained and roughly chopped)
  • 5 ounces grated Gruyère, Comte, or Emmentaler cheese
  • ¼ cup grated Parmigiano-Reggiano or pecorino Romano cheese
  • Kosher salt
  • Freshly ground black pepper
  • 1 package (17.3 to 18.3-ounce) frozen puff pastry (thawed)
  • 1 large egg

Instructions

  1. Preheat the oven to 400ºF and line baking sheets with parchment paper.
  2. Heat olive oil in a skillet over medium heat and sauté onion, garlic, and chili flakes until softened.
  3. In a mixing bowl, combine thawed spinach, chopped artichokes, sautéed mixture, Gruyère, and Parmigiano-Reggiano; season with salt and pepper.
  4. Roll out one puff pastry sheet on a floured surface and spread half the filling evenly while leaving a ½-inch border.
  5. Brush the edge with egg wash, roll up tightly into a log, and seal.
  6. Cut into ½-to-¾-inch slices and place on prepared baking sheets; brush tops with egg wash.
  7. Bake for 25-30 minutes until golden brown.
