  • 1/2 cup olive oil
  • 1 3/4 cups granulated sugar
  • 3 large eggs
  • 1 cup buttermilk
  • 2 Tbsp lemon zest
  • 1/3 cup fresh lemon juice
  • 1 cup salted butter, room temperature
  • 4 oz cream cheese, room temperature
  • 1 Tbsp lemon zest
  • 5 1/2 cups confectioner's sugar
  • 3 Tbsp fresh lemon juice
  • 3 to 4 drops yellow food coloring, optional
  • white chocolate curls and/or edible flowers (for garnish)

Instructions

  1. Preheat your oven to 350ºF (175ºC). Grease and flour two 8-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, mix melted butter, olive oil, and sugar until combined. Add eggs one at a time, then stir in vanilla extract, buttermilk, lemon zest, and lemon juice.
  4. Gradually combine the dry ingredients with the wet mixture until just mixed.
  5. Divide the batter evenly between the prepared pans and bake for 28-32 minutes or until a toothpick comes out clean. Cool in pans for ten minutes before transferring to wire racks.
  6. For the frosting: Beat room-temperature butter and cream cheese until creamy; gradually add confectioner's sugar and lemon juice until smooth.
  7. Once cakes are cool, frost as desired and garnish with toppings of choice.
