  • 8 chicken legs or thighs (bone-in, skin-on)
  • 1 onion (diced)
  • 1 clove garlic (minced)
  • 1½ apples (peeled, cored, diced & sliced)
  • 2 tablespoons flour
  • 1 tablespoon Dijon mustard
  • 2 cups apple cider
  • ½ cup chicken stock
  • 1 cup light cream
  • Fresh sage leaves
  • Salt and pepper

Instructions

  1. Season the chicken legs with salt and pepper. Heat cooking oil in a large pan over medium-high heat. Brown the chicken on all sides until golden, then set aside.
  2. In the same pan, sauté diced onion for two minutes, add garlic and diced apple; cook until fragrant.
  3. Sprinkle flour over the mixture, stirring well. Return the chicken to the pan along with mustard, sage, bay leaves, thyme, apple cider, and chicken stock. Bring to a boil; reduce heat and simmer uncovered for about 45 minutes.
  4. In a separate pan, melt butter over medium heat and caramelize apple wedges until golden brown.
  5. Stir in cream and caramelized apples into the chicken mixture during the last 15 minutes of cooking. Adjust seasoning as needed before serving.
