  • 1 ring turkey sausage (sliced into ¼-inch rounds)
  • 1 large onion (diced)
  • ½ cup celery (diced)
  • ½ red bell pepper (seeded, diced)
  • 2 teaspoons garlic (minced)
  • 1 teaspoon Cajun seasoning
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • 4 cups chicken broth
  • 4 large russet potatoes (peeled, cubed)
  • ½ cup heavy whipping cream
  • 1 cup mild cheddar cheese (shredded)
  • parsley (chopped for garnish)

Instructions

  1. In a large pot over medium heat, add vegetable oil. Once hot, add sliced turkey sausage and cook until browned, about 3-4 minutes. Remove and set aside.
  2. In the same pot, sauté onion, celery, and bell pepper until softened, about 5-8 minutes. Add garlic and cook for 1 additional minute.
  3. Stir in Cajun seasoning, kosher salt, black pepper, paprika, cayenne pepper, chicken broth, and cubed potatoes. Reduce heat and simmer until potatoes are fork-tender, approximately 20-25 minutes.
  4. Return cooked sausage to the pot. Stir in heavy cream and shredded cheese; simmer for an additional 5 minutes until everything is heated through.
  5. Garnish with fresh parsley before serving warm.
