  • 2 large eggs (lightly beaten)
  • 1 cup pecan halves
  • 2 tablespoons unsalted butter (melted for topping)
  • 2 tablespoons brown sugar
  • 1/8 teaspoon ground cinnamon (for topping)
  • vegan marshmallows (optional)

Instructions

  1. Preheat your oven to 350°F. Lining a baking sheet with parchment paper or aluminum foil will make clean-up easier later on.
  2. Cut the butternut squash in half lengthwise and scoop out the seeds. Placing the squash cut side down on your prepared baking sheet allows it to bake evenly. Bake for about 45 minutes until tender when pierced with a fork. Let it cool slightly before handling.
  3. While your squash bakes, lightly spray your casserole dish with vegetable cooking spray.
  4. Once cooled, scoop out the butternut flesh into a large mixing bowl—discarding the skin. Use a potato masher or food processor to mash until smooth.
